Lamb Curry

1Combine cooked lamb and vegetable stock in a pan .cooked lamb: 1 lb, vegetable stock: 1 c

2Heat over medium low for ⏱️ 10 minutes .

3In a large skillet , heat olive oil and butter .olive oil: 4 tbsp, butter: 2 tbsp

4Add red onion (chopped) , carrot (finely chopped) , mushrooms (chopped) , and pineapple (cubed) .red onion (chopped): 1 large, carrot (finely chopped): 1, mushrooms (chopped): 6 medium, pineapple (cubed): 1 c

5Stir-fry for ⏱️ 5 minutes over medium heat.

6Add curry powder , ginger , and garlic powder .curry powder: 1 tbsp, ginger: 1 tsp, garlic powder: 1 tsp

7Stir-fry for an additional ⏱️ 5 minutes .

8Remove the lamb from stock.

9Add the lamb to skillet.

10Add salt and pepper to taste.salt, pepper
